1. In a medium sauce pot on low heat add your spices, milk, and sugar. Simmer for 5 minutes then turn off the heat.

2. In a french press add your favorite variety of black tea, hot water (180°F), and steep for 5 minutes. 

3. For the rim garnish add corn syrup, nutmeg, and allspice in a small bowl. Brush the rim of the glass with the spiced syrup and generously coat the rim with brown sugar.

4. Strain the spiced milk mixture and froth the milk with a milk frother until there's about an inch of foam or so. Fill half of the mug with black tea and the other with the spiced milk. Top it off with a few scoops of foam and enjoy!

Ingedients:

1 tsp ground ginger
3-4 cardamon pods
2-3 cloves
1 cinnamon stick
1 tsp ground nutmeg
1 tsp ground allspice
2-3 tbsp brown sugar
1 cup milk
2 tbsp black tea
1-2 cups water

1 tsp ground nutmeg
1 tsp ground cinnamon
1 tsp ground all spice
3-4 tbsp brown sugar

1. In a medium sauce pot on low heat add the milk, cream, spices, sugar, and egg yolks. Stir until thoroughly combine and cook for 10 minutes or until it reaches 200°F. You'll know it's done when it completely coats the back of a spoon. Pour the eggnog into a container and refrigerate for 1-2 hours. 

2. In a bowl lightly whip the cream, brown sugar, and dark rum. I recommend slightly under whipping the cream so that it will be easier to drink with the eggnog. It should be like soft whipped cream. Set it in the fridge until you're ready to use it. 

3. For the rim garnish lightly brush some maple syrup around the rim of the mug. Grind up the graham crackers in a food processor until they're very fine and pour it onto a plate. Dip the mug into the graham crackers so that they generously coat the rim of the glass.

4. Take the chilled eggnog out of the fridge, pour it into the garnished glass, top with a few dollops of spiked whip cream and sprinkle a pinch of nutmeg on top. Share with your friends and family and enjoy!

1 vanilla bean
2 egg yolks
2 tbsp maple syrup
1/2 cup graham crackers
1/2 cup cream
2 tbsp brown sugar
2 tbsp dark rum
